Preparation

  1. For the plum layer, put all the ingredients in a pan. Simmer over low heat for 30 minutes until the liquid has reduced slightly and the plums are soft. Allow to cool completely before serving.
  2. Mix the mascarpone, quark cheese, sugar and vanilla sugar in a bowl. Separately, whip the cream in a tall container until stiff and add it to the mascarpone mixture. Finely chop the chocolate balls into small pieces and add as well.
  3. Place the cantuccini in a freezer bag and crush with a rolling pin.
  4. Now pour the dessert in the glasses. To do this, first spread about 2 teaspoons of Cantuccini on the base. Then, fill the glasses with the mascarpone cream and strcciatella cream using either a teaspoon or a pastry bag. Add 1 tablespoon of red wine plums as a third layer. Repeat and finish with the red wine plums.
  5. The dessert can either be prepared in advance or enjoyed immediately. Garnish with some fresh mint before serving.
